In Palestinian cuisine, hilbeh, hulbah, or fenugreek cake (Arabic: حلبة) is a dessert made from fenugreek seeds, olive oil, and semolina, topped with nuts, nigella seeds, or sesame, then coated in sugar syrup, which soaks into the cake.
