Madeira is a fortified wine made on the Portuguese island of Madeira, in the North Atlantic Ocean, just under 400 kilometers (250 mi) north of the Canary Islands, Spain and 520 kilometers (320 mi) west of Morocco. Madeira is produced in a variety of styles ranging from dry wines, which can be consumed on their own, as an apéritif, to sweet wines usually consumed with dessert. Cheaper cooking versions are often flavoured with salt and pepper for use in cooking, but these are not fit for consumption as a beverage.

The islands of Madeira have a long winemaking history, dating back to the Age of Exploration (approximately from the end of the 15th century), when Madeira was a standard port of call for ships heading to the New World or East Indies. To prevent the wine from spoiling, the local vintners began adding neutral grape spirits. On the long sea voyages, the wine would be exposed to excessive heat and movement, which benefited its flavour. Monica Larner is a wine critic and writer based in Rome. She is the Italian Reviewer for The Wine Advocate and eRobertParker.com, the bimonthly wine publication and website founded by wine critic, Robert Parker. She was selected in 2013 by Parker to replace the departing Antonio Galloni.

In 2003, Larner was selected to be the very first dedicated Italian wine editor for Wine Enthusiast. She is also a two-time winner of the Best Young Journalist of the Year (2008, 2010), one of the top honors given out yearly at the VinItaly exposition. In 2012, Larner won Best International Journalist also presented by the Comitato Grandi Cru d'Italia panel at VinItaly. Syrah, also known as Shiraz, is a dark-skinned grape variety grown throughout the world and used primarily to produce red wine. In 1999, Syrah was found to be the offspring of two obscure grapes from southeastern France, Dureza and Mondeuse Blanche. Syrah should not be confused with Petite Sirah, a cross of Syrah with Peloursin dating from 1880.

The style and flavor profile of wines made from Syrah are influenced by the climate where the grapes are grown. In moderate climates (such as the northern Rhone Valley and parts of the Walla Walla AVA in Washington State), they tend to produce medium to full-bodied wines with medium-plus to high levels of tannins and notes of blackberry, mint and black pepper. Viticulture (Latin: vitis cultura, "vine-growing"), viniculture (vinis cultura, "wine-growing"), or winegrowing is the cultivation and harvesting of grapes. It is a branch of the science of horticulture. While the native territory of Vitis vinifera, the common grape vine, ranges from Western Europe to the Persian shores of the Caspian Sea, the vine has demonstrated high levels of adaptability to new environments, hence viticulture can be found on every continent except Antarctica.

The duties of a viticulturist include monitoring and controlling pests and diseases, fertilizing, irrigation, canopy management, monitoring fruit development and characteristics, deciding when to harvest, and vine pruning during the winter months. Viticulturists are often intimately involved with winemakers, because vineyard management and the resulting grape characteristics provide the basis from which winemaking can begin. Languedoc-Roussillon wine (French pronunciation: [lɑ̃ɡ(ə)dɔk ʁusijɔ̃] ^ⓘ; Occitan: vin de Lengadòc-Rosselhon), including the vin de pays labeled Vin de Pays d'Oc, is produced in southern France. While "Languedoc" can refer to a specific historic region of France and Northern Catalonia, usage since the 20th century (especially in the context of wine) has primarily referred to the northern part of the Languedoc-Roussillon region of France, an area which spans the Mediterranean coastline from the French border with Spain to the region of Provence. The area has around 700,000 acres (2,800 km²) under vines and is the single biggest wine-producing region in the world, being responsible for more than a third of France's total wine production. A cellarette or cellaret is a small furniture cabinet, available in various sizes, shapes, and designs which is used to store bottles of alcoholic beverages such as wine or whiskey. They usually come with some type of security such as a lock to protect the contents. Such wooden containers for alcoholic beverages appeared in Europe as early as the fifteenth century. They first appeared in America in the early eighteenth century and were popular through the nineteenth century. They were usually made of a decorative wood and sometimes had special designs so as to conceal them from the casual observer. They were found in pubs, taverns, and homes of the wealthy. Merlot (/ˈmɜːrloʊ/ MUR-loh) is a dark-blue-colored wine grape variety that is used as both a blending grape and for varietal wines. The name Merlot is thought to be a diminutive of merle, the French name for the blackbird, probably a reference to the color of the grape. Its softness and "fleshiness", combined with its earlier ripening, make Merlot a popular grape for blending with the sterner, later-ripening Cabernet Sauvignon, which tends to be higher in tannin.

Along with Cabernet Sauvignon, Cabernet Franc, Malbec, and Petit Verdot, Merlot is one of the primary grapes used in Bordeaux wine, and it is the most widely planted grape in the Bordeaux wine regions. Merlot is also one of the most popular red wine varietals in many markets. This flexibility has helped to make it one of the world's most planted grape varieties. As of 2004, Merlot was estimated to be the third most grown variety at 260,000 hectares (640,000 acres) globally.

The influence of wine in ancient Greece helped ancient Greece trade with neighboring countries and regions. Many mannerisms and cultural aspects were associated with wine. It led to great change in Ancient Greece as well.
The ancient Greeks pioneered new methods of viticulture and wine production that they shared with early winemaking communities in what are now France, Italy, Austria and Russia, as well as others, through trade and colonization. Along the way, they markedly influenced the ancient European winemaking cultures of the Celts, Etruscans, Scythians and ultimately the Romans. (Full article...)

Mention of alcoholic beverages appears in the Hebrew Bible, after Noah planted a vineyard and became inebriated. In the New Testament, Jesus miraculously made copious amounts of wine at the wedding at Cana (John 2). Wine is the most common alcoholic beverage mentioned in biblical literature, where it is a source of symbolism, and was an important part of daily life in biblical times. Additionally, the inhabitants of ancient Israel drank beer and wines made from fruits other than grapes, and references to these appear in scripture. However, the alcohol content of ancient alcoholic beverages was significantly lower than modern alcoholic beverages. The low alcohol content was due to the limitations of fermentation and the nonexistence of distillation methods in the ancient world. Rabbinic teachers wrote acceptance criteria on consumability of ancient alcoholic beverages after significant dilution with water, and prohibited undiluted wine.

In the early 19th century the temperance movement began. Evangelical Christians became prominent in this movement, and while previously almost all Christians had a much more relaxed attitude to alcohol, today many evangelical Christians abstain from alcohol. Bible verses would be interpreted in a way that encouraged abstinence, for example 1 Corinthians 10:21, which states, "You cannot drink the cup of the Lord and the cup of demons too..." Grenache (/ɡrəˈnæʃ/, pronounced [ɡʁənaʃ] ^ⓘ) or Garnacha (pronounced [ɡaɾˈnatʃa]) is one of the most widely planted red wine grape varieties in the world. It ripens late, so it needs hot, dry conditions such as those found in Spain, where the grape is believed to have originated. It is also grown in the Italian island of Sardinia, the south of France, Australia, and California's Monterey AVA, Paso Robles, Santa Barbara County and San Joaquin Valley.

It is generally spicy, berry-flavored and soft on the palate and produces wine with a relatively high alcohol content, but it needs careful control of yields for best results. Characteristic flavor profiles on Grenache include red fruit flavors (raspberry and strawberry) with a subtle, white pepper spice note. Grenache wines are highly prone to oxidation, with even young examples having the potential to show browning (or "bricking") coloration that can be noticed around the rim when evaluating the wine at an angle in the glass. As Grenache ages the wines tend to take on more leather and tar flavors. Wines made from Grenache tend to lack acid, tannin and color, and it is often blended with other varieties such as Syrah, Carignan, Tempranillo, Mourvèdre and Cinsaut. (Full article...)

Burgundy wine (French: Bourgogne or vin de Bourgogne) is a wine made in the Burgundy region of east-central France, in the valleys and slopes west of the Saône, a tributary of the Rhône. The most famous wines produced here, and those commonly referred to as "Burgundies", are dry red wines made from pinot noir grapes and white wines made from chardonnay grapes.

Red and white wines are also made from other grape varieties, such as gamay and aligoté, respectively. Small amounts of rosé and sparkling wines are also produced in the region. Chardonnay-dominated Chablis and gamay-dominated Beaujolais are recognised as part of the Burgundy wine region, but wines from those subregions are usually referred to by their own names rather than as "Burgundy wines". Vin délimité de qualité supérieure (French pronunciation: [vɛ̃ delimite də kalite sypeʁjœʁ], "delimited wine of superior quality"), usually abbreviated as VDQS, was the second highest category of French wine, below appellation d'origine contrôlée (AOC) in rank, but above vin de pays (country wine). VDQS was sometimes written as AOVDQS, with AO standing for appellation d'origine. VDQS wines were subject to restrictions on yield and vine variety, among others.

There were relatively few VDQS as they typically moved on to AOC status after a number of years. VDQS therefore represented a small part of overall French wine production. In 2005, VDQS wines made up 0.9% of volume amounting from 409,472 hectoliters of production. 42.3% of the VDQS wines produced in that year were white, with the remaining 57.7% being either red or rosé. The role of yeast in winemaking is the most important element that distinguishes wine from fruit juice. In the absence of oxygen, yeast converts the sugars of the fruit into alcohol and carbon dioxide through the process of fermentation. The more sugars in the grapes, the higher the potential alcohol level of the wine if the yeast are allowed to carry out fermentation to dryness. Sometimes winemakers will stop fermentation early in order to leave some residual sugars and sweetness in the wine such as with dessert wines. This can be achieved by dropping fermentation temperatures to the point where the yeast are inactive, sterile filtering the wine to remove the yeast or fortification with brandy or neutral spirits to kill off the yeast cells. If fermentation is unintentionally stopped, such as when the yeasts become exhausted of available nutrients and the wine has not yet reached dryness, this is considered a stuck fermentation.

The most common yeast associated with winemaking is Saccharomyces cerevisiae which has been favored due to its predictable and vigorous fermentation capabilities, tolerance of relatively high levels of alcohol and sulfur dioxide as well as its ability to thrive in normal wine pH between 2.8 and 4. Despite its widespread use which often includes deliberate inoculation from cultured stock, S. cerevisiae is rarely the only yeast species involved in a fermentation. Grapes brought in from harvest are usually teeming with a variety of "wild yeast" from the Kloeckera and Candida genera. These yeasts often begin the fermentation process almost as soon as the grapes are picked when the weight of the clusters in the harvest bins begin to crush the grapes, releasing the sugar-rich must. While additions of sulfur dioxide (often added at the crusher) may limit some of the wild yeast activities, these yeasts will usually die out once the alcohol level reaches about 15% due to the toxicity of alcohol on the yeast cells physiology while the more alcohol tolerant Saccharomyces species take over. In addition to S. cerevisiae, Saccharomyces bayanus is a species of yeast that can tolerate alcohol levels of 17–20% and is often used in fortified wine production such as ports and varieties such as Zinfandel and Syrah harvested at high Brix sugar levels. Another common yeast involved in wine production is Brettanomyces whose presence in a wine may be viewed by different winemakers as either a wine fault or in limited quantities as an added note of complexity. The state of Oregon in the United States has established an international reputation for its production of wine, ranking fourth in the country behind California, Washington, and New York. Oregon has several different growing regions within the state's borders that are well-suited to the cultivation of grapes; additional regions straddle the border between Oregon and the states of Washington and Idaho. Wine making dates back to pioneer times in the 1840s, with commercial production beginning in the 1960s.

American Viticultural Areas entirely within the state are the Willamette Valley AVA (with 10 nested AVAs) and the Southern Oregon AVA with (5 nested AVAs). Parts of the Columbia Gorge, Walla Walla Valley, and Snake River Valley AVAs lie within Oregon. (Full article...)

Mauricio González-Gordon y Díez, Marquis of Bonanza (18 October 1923 – 27 September 2013) was a Spanish sherry maker and a conservationist. Most of his life he worked for the family company, González Byass, where he increased its exports to a worldwide level. His family estate was located in the wetland region called Doñana in southern Spain and was threatened by drainage efforts in the early 1950s. González-Gordon with the help of researchers and international support managed to preserve the site, while at the same time donating some of his family land to the conservation effort. Afterward, González-Gordon became one of the founders of the Spanish Ornithological Society in 1954. His conservation efforts for Doñana culminated in the creation of the Doñana National Park in 1969. The area was designated a UNESCO World Heritage Site in 1994. (Full article...)
